When my bananas have ripened past my liking, one of my favorite things to make are banana muffins. This recipe was given to me by a friend, who’s great aunt came up with this delicious muffin.
1/2 c. butter, at room temperature
1/2 c. sugar
1 c. banana (about 2 bananas)
1 tsp. vanilla
1 1/2 c. flour
1 tsp. cinnamon
1 tsp. baking soda dissolved in 1 T. water
Bake at 350 degrees for 20 min.
