After spending several hours over the weekend putting together our new patio set, I decided to celebrate with our first summer meal outdoors. I’ve been collecting numerous “must try” recipes on Pinterest and I thought this recipe for Grilled Peach Salad with Prosciutto and Goat Cheese would be perfect for the occasion. We don’t own a grill so I pan seared the peaches and they were perfect. Roasting the prosciutto wrapped peaches in the oven at a high temp would also work well for those who don’t have a grill.
A friend has several fig trees in her backyard and we’re going to try this recipe with prosciutto wrapped figs. I also used up my salad leftovers with strawberries instead of peaches and it was great.
