Antonia’s Melanzane Florentine

I love Italian food and I especially love Italian restaurants that make a mean eggplant. We took my husband’s Italian family to Antonia’s Italian Ristorante over the weekend and enjoyed a wonderful meal. I had the Melanzane Florentine, breaded eggplant layered with spinach, roasted peppers and goat cheese baked in a tomato basil cream sauce served with angel hair pasta. Delicious!
